Butcher’s Pickings up yet another title! - VIDEO

A SOUTH Tyneside butcher has added to his amazing awards haul – by branching out into burgers.

Paul Clark, who runs George H Pickings in Front Street, East Boldon, is best known for his prize-winning sausages, but decided to try something different for his latest competition entry.

He travelled to Birmingham for the National Federation of Meat and Food Traders (NFMFT) gala event at the NEC.

The contest had more than 300 entries from independent butchers across the UK, but the 45-year-old came out on top in the Speciality Burger category, for his pork and apple creation.

He said: “I’m always trying new things, so thought I’d try my hand at a burger.

“I wanted to keep a classic sausage flavour combination and see how it tasted in a burger.

“I was pleased with how they came out and, thankfully, so were the judges.”

He added: “Anything and everything can inspire a new flavour.

“As this one has been a success, I think I’ll give some others a go.

“It doesn’t mean I’m abandoning my sausages, though. I’ll keep working just as hard on them.”

Mr Clark also won four gold awards at the event for his sausages and was delighted with his latest wins.

He said: “It’s great to get more awards.

“These events give me a chance to see what the competition is like from across the country, and it’s always exciting to find out that I’m up there with the best around.

“Most of us get on fine and have got to know each other from these things.

“We’re always picking up ideas and I’m going to keep on coming up with new ones.

“It’s the only way to stay at the top of the game.

“The awards can keep coming but, of course, it’s more important that my customers are as happy as the judges.”
